Menu Plan Monday

I must be honest, the last couple of weeks I haven't made a real menu plan until I sit down to write my "Menu Plan Monday" post. :) I actually have at least a week's worth of meals in my freezer, so I just buy the essentials for the week (milk, fresh veggies, etc) and go from there for my menu planning. Here's this week's plan:

Monday - Leftover chicken chili
Tuesday - Bison and bean burritos
Wednesday - Cajun lentils and rice (from the freezer)
Thursday - Leftover lentils and rice
Friday - Homemade pizza
Saturday - Chicken quesadillas
Sunday - Thai chicken (from the freezer)

Breakfasts will consist of cereal, bagels and homemade banana bread. Maybe some waffles for J. Lunches will be leftovers, tuna sandwiches (Me), peanut butter and jelly (Sam), and salads.

  1. my menu this week: balsamic vinagrette baked chicken with parmesan orzo and steamed mixed veggies (broc. cauliflower and carrots); chicken quesadillas and fruit; stuffed shells with tossed salad and texas toast (tonite, wed). Tomorrow is Grilled Salmon with wild rice, steamed peas, tropical fruit salad, and sweet carrots; friday is ham and cheese melts with 3 bean salad; Sat is Thai Chicken and Noodles, leftover sweet carrots (if any left!) OR broccoli salad. i love planning my menu....I now do it on sunday afternoons or evenings...helps keep my grocery bill down as well! :) your meals sound great!!
