Menu plan Monday

Hi friends!  I apologize that I didn't get a single post up since last Monday.  I've been super busy this week and more sleep deprived than normal, so I really didn't have much exciting to share.  We are coming up on Week #2 of my detox.  This week will be all raw foods.  I had to consult various raw cookbooks because my hubby will have none of eating just salads for dinner for a whole week.  It's enough for him that he agreed to eat raw dinners for a week.  :)  Lots of planning for this week since I may have to use my dehydrator for some entrees or soak some walnuts the night before, etc, etc, etc.  Tonight is my last vegan meal before starting my all raw week, so our menu plan reflects that.

Monday - Mexican lentil stir fry over brown rice
Tuesday - Raw tacos in spinach tortillas with mexican "rice"
Wednesday - Raw sushi (no fish, just veggies) with Japanese "rice"
Thursday - Eating out with friends
Friday - Coconut curry soup, Mediterranean dolmas with sun dried tomato hummus (bean free)
Saturday - Zucchini pasta with marinara sauce
Sunday - Polenta with mushroom ragout

Breakfasts will be smoothies, granola with almond milk, banana walnut pancakes, and cereal.  On Sunday, I plan on making a special breakfast of raw cinnamon rolls for my hubby, since he will have been such a good sport for almost a week.

Lunches will consist of leftovers, PB&J, raw cookie dough (oatmeal, few dashes of cinnamon and vanilla, big spoonful of almond butter, and a drizzle of maple syrup), apple raisin salad, corn salad,and fruit.

  2. Angie - Thanks! I have done a lot of raw stuff before, but not 100% for as long of a period of time. Should be an adventure!

    THM - Well, the Mexican rice base is acorn squash put in a food processor or blender until it has the consistency of rice. And the Japanese rice base is parsnips. I have made the Mexican rice before and it looked more like couscous, but was very tasty. The Japanese rice is new to me.

  3. Good for YOU! We did a raw month last summer (actually hubby did, and posted about it on my blog. HE made all the meals for 1 month breakfast/lunch/dinner, it was glorious! We are going to make it a once a year thing in the summer not using the stove/oven in the summer was awesome!)

  4. I'm intrigued by the "rice." I've heard of using cauliflower, but that didn't work for me and for some reason I hadn't considered trying other veggies instead. I'm going to have to try the parsnip rice. But the raw cookie dough if my favorite part of your menu plan ;)
    Good luck with the rest of your detox! You meals sound delicious.
