Menu plan Monday

I should apologize for my absence the last week and a half. There has been a lot going on and blogging, well, it just wasn't one of my top priorities. We have managed to stick with our menu plans for the most part, in spite of the craziness. Here's our plan for this week:

Monday - Beef roast in the crockpot, baked potato wedges, roasted asparagus
Tuesday - Leftovers
Wednesday - Chicken stir fry with greens over brown basmati rice
Thursday - Sweet pepper and kale over whole wheat pasta
Friday - Homemade pizza
Saturday - Cookout! We will be heading to a friend's house this evening and will be grilling with another friend in the afternoon. Let's hope it's a good day for it!
Sunday - Cajun lentils and rice

Lunches will be leftovers, PB&J, smoothies, and raw pizza. This is my first attempt at making raw pizza. I have onion bread in the dehydrator as we speak. This lunch is planned for Wednesday. I hope it comes out yummy!
Breakfasts will be bagels, waffles, muffins, eggs and cereal.

  1. What are raw pizzas? Why dehydrated bread? I'm curious since I looove homemade pizzas.

  2. Raw food is food that is not cooked above a certain temperature...usually 105 degrees. So, this pizza has an onion "bread" crust that consists of ground flax and sunflower seeds, Bragg's Amino Acids, onions, and olive oil. The benefit to keeping the food under this temp is that the enzymes remain in tact (heating food above 105 degrees starts to kill the living enzymes in your food) and it tends to be easier to digest. It's an alternative to regular cooking for me, not a lifestyle that I embrace completely. It's nice to use this type of cooking when it's summertime because then I don't have to use the oven. :) My homemade pizza that I have on my menu plan for Friday is your old-fashioned homemade pizza crust made with flour.

  4. I need to get a dehydrator! I am inching slowly to raw foods. I just picked up a juicer at yard sale for $1! Slowly but surly I hope to go more raw for the summer!
