Food Waste Friday

Food Waste Friday has escaped me the past couple of weeks. We have been doing pretty well and have wasted little more that Miss J's table scraps. This week we weren't so lucky. I have three-quarters of a package of cream cheese from I don't know when. I don't even remember why I bought it, but needless to say, I didn't use it.

I also have a half container of ricotta cheese. That stuff is my nemesis. I can't seem to buy a container and use it all before it goes bad. I need to start buying local ricotta anyway. The price of that will motivate me to use it up quickly. ;) That's all though...not too bad considering we have had a TON of stuff going on the last few weeks (sick family and a toddler whose tummy issues have gotten worse).

  1. That is not bad at all. Next time put ricotta on your pizza. It's so good.

  2. For both the cream cheese and the ricotta. Portion it into single serve and freeze it. For example if you only use cream cheese on bagels then put up 1-2Tbsps (I have a melon baller that is 1 Tbsp and a second that is 2Tbsp, I use that to scoop the cream cheese and freeze it). If I know I am going to have a bagel in the am, I get it out. If I don't I pop it in the micro for a few minutes.
    With the ricotta - I never let ricotta go to waste, but if you have left overs freeze it in ice cube trays and then pop it out. This way you can add ricotta to sauces, and other dishes pronto. What do you use ricotta for? I use it in lazagna and I use 2 whole containers at a time? I also add some lemon or orange extract, coconut flakes and mini dark choc chips and enjoy it as fruit dip or straight dessert (never any left overs ;)
